Creative Wokking

Egg Fu Young in Wok Wide Angle 1

Wok cooking is the greatest, it is my favorite way to cook for myself, my family, friends, and you. Take for instance sushi making. Long ago, sushi wasn’t that creative, but now? Do you see all the foodies flocking to sushi bars as the creativity is going off the hook? Well, who’s to say we can’t get creative with the wok?

Now I come from a Filipino American household growing up. The Filipino style of cooking has influences from China, Japan, Korea, Spain, and even Portugal. Let me explain how we cook from Hawaii where I grew up. We took influences from other cultures and made it our own. I remember we’d make teriyaki beef, and immediately for the reason of not having a lot of money to buy expensive ingredients, we’d take the teriyaki and toss it into spaghetti noodles with veggies. Our poor version of a noodle dish.

We were the kings and queens of mix and matching foods from other cultures. If we were low on rice, but had won ton wrappers, we’d steam the wrappers, and eat it with mom’s Swiss steak. It was like dumpings in a stew.

So let’s take wokking to another level. Let’s say you and your loved one want to eat in for the night. You want it romantic, no problem because I can supply the dining setups, from plates, bowls, flatware, wine glasses and wine too. We can get creative with the wok, as many dishes as you can handle. And get this, if you hire me, why not order extra meals, then you and your lover can store it in the fridge, or freezer. I can wrap it up nice and tight in zip bags for you. Complete with heating up instructions.

Lets say, you want to start off with an appetizer. Get creative, maybe you want a pizza type of lumpia. Great, we can stuff those crepe wrappers with marinara, cheese, pepperonis and mushrooms.

You want beer battered shrimp? OK let’s do that, but maybe a Vietnamese type of stir friend sauce to go with it? How about a prime Wagyu beef ribeye, sliced thin, and stir fried quickly with a simply soy sesame sauce? Or maybe a steamed fish with some bacon? Hey guys sky’s the limit with a wok.

Who thinks that Marlin isn’t a good eat? Do you? Marlin is really delicious meat, for a big gamer, she’s firm, but not too tough. You can make sashimi, poke, smoke it, grill it, pan cook it-the sky is the limit with this fish.

I decided to make a Thai Style Au a while back, in fact if you follow my other blog on Google, I wrote up on this dish. What I did was purchase 2-8 oz. loin filets, the color was kind of light pink/red, and very firm, perfect for pan cooking. Basically I used some quality cooking oil, ginger, and cooked it medium, about 4 minutes on each side. Took it out of the pan, and returned the pan to the medium-high setting. Then added a pinch more of ginger, 2 tbsp. of soy sauce, 2 tbsp. of fish sauce (patis), 2 tbsp. of fresh lemon juice, 1/2 tsp. of sambal oelek (garlic chili sauce), and sugar to round off the flavor. Made a quick pan sauce, and drizzled it over the marlin filet. I used what ever veggies I had on hand which was cucumber and a very ripe tomato. Wedge of lime and some green onion for garnish.

It was pretty good-simple you know?

Ron’s 4 Course Wokking

As a one-man operation, yeah I’m better than Superman. And since I’m in the salesman mode, I do suggest for my couples, a nice 4 course Asian style meal.

  1. Start you off with some steamed mandu. A Korean style steamed dumpling, filled with your choice of protein. Chicken, Pork, Shrimp, Beef, or Tofu if you’re a vegan. And a ramekin of a Korean sweet sauce with some heat, with hints of garlic and ginger.
  2. Then I’ll head to the wok for a stir fry, with your choice of protein, Chicken, Pork, Beef, Shrimp or Fish, or Tofu. This one we’ll use kimchi cabbage as the flavoring, it’s garlicky and gingery, more heat. Then I’ll plate it with some hot steamy rice on the side. As you partake in that, I head to the wok again for…..
  3.  A more salty type of wok dish, again, you choose the protein, and I’ll whip up something that is trending for the discriminating foodie. The use of…fish sauce. That’s right, fish sauce is a main ingredient in lots of Asian style cooking, however too much of it, well let’s just say it will make your home fill with an aroma that’s well…fishy. But by using fish sauce sparingly with citrus, it makes a wonderful flavor. Just think, if you love seafood stew, well.. or…ah… anchovies? Tuna salad? Ok, I will say this, most of my clients that never had fish sauce, right now, they buy bottles of it and use it in their own cooking. Seriously.
  4. And for dessert, I can whip up some simple brownies, with homemade chocolate sauce. BAM!!!!!

Ok foodies, hope to hear from you in seconds, hurry up pick up your phone, I got bills to pay. LOL, no have a safe and wonderful day guys.

How Do I Charge?

This is how I charge for my services, and it varies. Right now I’m on Maui, so this is how it works. If you are staying on the west side, meaning anywhere from Puamana all the way to Kapalua, I won’t charge you any extra for my drive time, for instance you live in Wailuku, Kahului, Kihei, or Up Country, I think you get it. But, if I need to travel that far, the extra charges will be $10.00 for fuel. Not much.

  • 35-50 per hour. (this is from the time I get to your place to the time I leave)
  • Main ingredients such as proteins, Fish, Seafood, Pork, Beef, Chicken, Tofu, Turkey. And vegetables and fruits, and various liquids or beverages, and any baked goods is going to be added on, as I will give you the receipt of what the shopping for these items cost.
  • YOU WILL NOT BE CHARGED FOR, ingredients that are standard, like salt and pepper, basic condiments that are used in the prepared dishes. Such as dashes of herbs or spices, and table or teaspoons of various ingredients for flavors.
  • A standard dinner featuring cooking with a wok for couples are about $150.00, and that doesn’t include the shopping for your main ingredients such as proteins, vegetables, fruits, beverages, baked goods.

Desserts: I can do simple desserts that don’t take lots of time preparing, if you are celebrating any occasion, I can purchase good quality baked goods from reputable sources. If you are a vegan, I can get dessert from Down To Earth Natural Foods, or request a special order from other bakeries. *Travel time will be charged accordingly for out of the way purchases of a minimum $10.00.

Mixed Drinks: If you have the knowledge of liquors, I suggest you handle that portion of the evening. Or I can pick up a bottle of wine, and serve that, or beers.

Table Settings: More than likely, your home will come with plates, bowls, and other tableware, including glasses, mugs and cups. (Before we sign on to the job, I’ll be asking you questions about the table set up). I do have some plates, and flatware.

For Special Occasions: If you want a romantic setting for any special love related dinner, I do have musicians available, such as a one man guitar/singer. Low key, mellow music in your home. Why use the iPhone plugged into your stereo? Wouldn’t a live musician do better? For something like this there will be an extra charge to pay for the entertainment that starts about $200.00

One thing I do ask if it is possible, is for me to take selfie pictures of my clients and myself to create a history of all of my experiences with my clients to be posted on my website and social media. (If you do not want your person photographed I will honor that, however I will ask if you would kindly write down an honest comment of your experience, and at least your first name, and your city where you are from. I honor people’s privacy.

Thank You- hope to hear from you soon.
