Asian American Style Comfort Foods

If you are looking for a personal chef that can do comfort foods in Asian styles, just give me a buzz. This is a simple Chicken Chow Fun dish, simply made with rice chow fun noodles, chicken, and seasoned simply with salt, pepper, and soy sauce (shoyu). Ron’s 4 Course Wokking

As a one-man operation, yeah I’m better than Superman. And since I’m in the salesman mode, I do suggest for my couples, a nice 4 course Asian style meal.

  1. Start you off with some steamed mandu. A Korean style steamed dumpling, filled with your choice of protein. Chicken, Pork, Shrimp, Beef, or Tofu if you’re a vegan. And a ramekin of a Korean sweet sauce with some heat, with hints of garlic and ginger.
  2. Then I’ll head to the wok for a stir fry, with your choice of protein, Chicken, Pork, Beef, Shrimp or Fish, or Tofu. This one we’ll use kimchi cabbage as the flavoring, it’s garlicky and gingery, more heat. Then I’ll plate it with some hot steamy rice on the side. As you partake in that, I head to the wok again for…..
  3.  A more salty type of wok dish, again, you choose the protein, and I’ll whip up something that is trending for the discriminating foodie. The use of…fish sauce. That’s right, fish sauce is a main ingredient in lots of Asian style cooking, however too much of it, well let’s just say it will make your home fill with an aroma that’s well…fishy. But by using fish sauce sparingly with citrus, it makes a wonderful flavor. Just think, if you love seafood stew, well.. or…ah… anchovies? Tuna salad? Ok, I will say this, most of my clients that never had fish sauce, right now, they buy bottles of it and use it in their own cooking. Seriously.
  4. And for dessert, I can whip up some simple brownies, with homemade chocolate sauce. BAM!!!!!

How Do I Charge?

This is how I charge for my services, and it varies. Right now I’m on Maui, so this is how it works. If you are staying on the west side, meaning anywhere from Puamana all the way to Kapalua, I won’t charge you any extra for my drive time, for instance you live in Wailuku, Kahului, Kihei, or Up Country, I think you get it. But, if I need to travel that far, the extra charges will be $10.00 for fuel. Not much.

STANDARD RATES

  • 35-50 per hour. (this is from the time I get to your place to the time I leave)
  • Main ingredients such as proteins, Fish, Seafood, Pork, Beef, Chicken, Tofu, Turkey. And vegetables and fruits, and various liquids or beverages, and any baked goods is going to be added on, as I will give you the receipt of what the shopping for these items cost.
  • YOU WILL NOT BE CHARGED FOR, ingredients that are standard, like salt and pepper, basic condiments that are used in the prepared dishes. Such as dashes of herbs or spices, and table or teaspoons of various ingredients for flavors.
  • A standard dinner featuring cooking with a wok for couples are about $150.00, and that doesn’t include the shopping for your main ingredients such as proteins, vegetables, fruits, beverages, baked goods.

Desserts: I can do simple desserts that don’t take lots of time preparing, if you are celebrating any occasion, I can purchase good quality baked goods from reputable sources. If you are a vegan, I can get dessert from Down To Earth Natural Foods, or request a special order from other bakeries. *Travel time will be charged accordingly for out of the way purchases of a minimum $10.00.

Mixed Drinks: If you have the knowledge of liquors, I suggest you handle that portion of the evening. Or I can pick up a bottle of wine, and serve that, or beers.

Table Settings: More than likely, your home will come with plates, bowls, and other tableware, including glasses, mugs and cups. (Before we sign on to the job, I’ll be asking you questions about the table set up). I do have some plates, and flatware.

For Special Occasions: If you want a romantic setting for any special love related dinner, I do have musicians available, such as a one man guitar/singer. Low key, mellow music in your home. Why use the iPhone plugged into your stereo? Wouldn’t a live musician do better? For something like this there will be an extra charge to pay for the entertainment that starts about $200.00

One thing I do ask if it is possible, is for me to take selfie pictures of my clients and myself to create a history of all of my experiences with my clients to be posted on my website and social media. (If you do not want your person photographed I will honor that, however I will ask if you would kindly write down an honest comment of your experience, and at least your first name, and your city where you are from. I honor people’s privacy.

Hi my foodies, as 2016 is in full swing, I’m getting my chops back into action. If you are a single that needs food prepped for the week, or a couple that lives on Maui or Vegas (depending on month), and need a personal chef cooking Asian American comfort foods, give me a call 808-385-7667 and I can work with you. Whatever it is you want, I’ll do it. Breakfast, Lunch, Dinners and anything in-between.

It’s been a while maintaining my blog, but here is some of the meals I’ll focus on as a standard menu.

BREKFAST

  • OMELETS (2 or 3 eggs, organic if requested, whites only if requested, ham, Portuguese sausage, Italian sausage, Ground beef, Ground pork, Ahi, Salmon, Shrimp, Lobster, Crab, Spam, Spinach, Mushrooms, Bell peppers, Sweet Maui Onions, Green onions, Cheddar, Mozzarella, Sour Cream)
  • GRUMBLES (2 or 3 eggs)- All this is, imagine a messed up but delicious omelet. Kids love it.
  • BREAKFAST WRAPS- this is a Grumble wrapped up in a heated flour tortilla
  • EGGS ANY STYLE- Princess Scramble (soft creamy), The Man Scramble (6 eggs with green onions), Over Easy, Egg Whites.
  • LOCO MOCO- White Rice, 9 oz. seasoned ground beef patty, topped with brown pan gravy, sautéed eggplant.
  • RIBEYE- Prime or Choice grade Ribeye of beef 8 oz. pan seared, topped with pan ju, potatoes, or rice, 2 or 3 eggs any style. Side of kimchi cabbage
  • HOT CAKES- Fluffy cakes, as many as you want, 1, 2 stack, 3 stack, 4 and up. Coconut Maple syrup, Pineapple Sauce, or any brand you want, I’ll get.
  • FRENCH TOAST- Hawaiian Sweetbread sliced, and coated in a sweet batter, cooked golden. Top it with, pineapples, papaya, strawberries, Maple Syrup, Coconut Maple syrup.
  • 49 er FLAP JACKS- Hefty Jacks, with butter, and Maple Syrup.
  • VEGAN SCRAMBLE- 7 oz, grounded firm organic tofu, sautéed in oil, garlic, scallions, turmeric, Spike seasoning, with Vegenaise vegan mayonnaise, Sour Cream. Toast or Potatoes.
  • FRESH FRUITS- Available at market.
  • RON’S BENNIES- 2 poached eggs, rising on toasted Hawaiian Sweetbread, or English muffins, with choice of Portuguese sausage, Canadian bacon, topped with fresh made Hollandaise Sauce. (I can create other Benedict as well)

LUNCH

  • HAM & CHEESE SANDWICH- Shaved Ham, pan heated in garlic oil, toasted choice of bread, French, Italian rolls, or all grain. Mozzarella cheese, Sautéed Sweet onions, fresh whipped mayonnaise, Stone ground mustard (quality brand). Chips (quality brand). Pickle.
  • ROAST BEEF SANDWICH- Thin cut quality from market Roast Beef, pan heated in garlic oil, toasted choice of bread, French, Italian rolls, or all grain. Mozzarella cheese, Sautéed Sweet onions and Mushrooms, fresh whipped mayonnaise, Stone ground mustard (quality brand). Chips (quality brand). Pickle.
  • CHICKEN BREAST SANDWICH- Whole or half a skinless or skin on Chicken Breast, seasoned with Hawaiian sea salt, and fresh ground black pepper, and roasted in your oven, topped with Mozzarella cheese right before it’s done to melt. Choice of bread, French, Italian rolls, or all grain. Sautéed Sweet onions and Mushrooms, fresh whipped mayonnaise, Stone ground mustard (quality brand). Chips (quality brand). Pickle.
  • KUNG PAO CHICKEN- Spicy Chinese style chicken stir fry, topped with roasted Peanuts or Almonds. Served with white or brown rice.
  • BEEF BROCCOLI- Chinese style stir fried beef with par boiled broccoli tops.
  • SHRIMP STIR FRY- In garlic & ginger, with a soy, and oyster sauce blend, mushrooms, and boy choy cabbage
  • CHOW FUN noodles- Stir fried with your choice of beef, pork, chicken, with garlic and ginger, green onions, bean sprouts, carrots, celery.
  • FISH PATTIES w. CHICKEN GRAVY- Fish filet, depending on market availability. Ahi tuna, Ono wahoo, minced up with bread crumbs, chives, onions, eggs, and from into patties and fried crisp, served with white or brown rice.
  • BEEF ONION SOUP- Diced Chuck of beef, beef bone,  ginger, onions, tomatoes, greens, seasoned with vinegar, fish sauce *optional, salt and pepper, hot peppers, and served with white or brown rice.
  • HAMBURGER STEAK w. BROWN GRAVY- 2- 5 oz. hand mixed beef patty, seared with brown pan gravy, served with white or brown rice, and sautéed veggies.
  • TACOS- 2 soft shell flour or corn tortillas, filled with your choice of stir fried chicken, beef, pork, or seafood. Shredded greens, black beans (quality brand), Wok Fried spicy rice.

DINNER

Appetizers

  • Fried or Steamed Korean Dumplings (Mandu), pork, beef, or fish. With spicy soy dip.
  • Fried or Steamed Chinese Dumplings (Wontons), pork, beef, or shrimp. With hot mustard dip.
  • Fried Chicken Wings, topped with hot sauce, teriyaki sauce, or Korean Kalbi sauce. Celery sticks.
  • Fresh Ahi Sashimi (if available). Sweet Soy dip. Hot Soy dip.
  • Stuffed Bells- Half bell peppers, stuffed with creamy shrimp, or tofu, using quality mayonnaise, sour cream, chives, herbs and spices.

Soups (Meal Size)

  • Plantation Pork Soup- Pork meat and bones, seasoned with vinegar, soy sauce, with greens, tomatoes, round onions. Served with Fried Rice.
  • Fish Soup- (if available) red snapper, onions, tomatoes, herbs and spices.) Served with Fried Rice.
  • Meatball Soup- Seasoned Beef meatballs, in beef broth, mushrooms, and onions, seasoned with red wine, bay leaves, garlic. Served with Pan Fried garlic bread.

Salads (Small or Meal Size)

  • Shrimp Salad- Shrimp (pre-cooked market), tossed in kale, spinach, cherry tomatoes, with Asian vinaigrette, topped with feta cheese.
  • Bacon & Tomato Salad- Crisp fried bacon, fresh sliced cherry tomatoes, sweet round onions, basil, salt and pepper, lime juice, topped with Monterey Jack cheese.
  • Ahi or Maui Salad- 4 oz. (small) 12 oz. (meal) Sautéed Ahi or Mahi in garlic oil/butter, placed over a bed of seasoned kale, Chinese cabbage, shiitake mushrooms. With a fresh made garlic aioli drizzle over the fish. Served with dinner rolls.

Entrees (Starches are mashed potatoes, white or brown rice, fried rice, or roasted yams)

  • Pan Seared Ribeye with wine sauce.
  • Braised Short Rib of Beef, with herb sauce.
  • Pan Fried Pork Chops with pan gravy
  • Kobe Beef Loaf- Melt in your mouth Kobe beef meat loaf, with drippings gravy.
  • Oven Roasted Salmon- Topped with a Shoyu Mayo, and herbs.
  • Miso Ahi Filets- Ahi filets (if available) pan seared in a miso sauce, comes out tender, sweet and savory, with the sake rice wine that gives it some character.
  • Portuguese Bean Soup- This takes some time to cook, if you don’t mind me hanging out at your place as it cooks. This I swear, you will have extras for you to enjoy.
  • Wonton Soup- Steamed Pork or Shrimp wontons, in a chicken broth, seasoned with ginger, soy sauce, oyster sauce, green onions, bok choy, bean sprouts, carrots.
  • Chicken Papaya Soup- From my Filipino culture, chicken, green papaya, seasoned with ginger, garlic, onions, fish sauce, salt and pepper.
  • Oxtail Soup- If you’ve haven’t had Oxtails, this meaty part of the steer is great, slow cooked soup with cabbage and tomatoes will make your jaws drop.

This is just the standard menu. Contact me to see what else I can pull out from my sleeve. Remember, I focus on cooking for singles and couples. I do not do large gigs.

Filipino Style for Spring

I execute simple cooking. I’m riding the comfort food train lately, especially if I’m cooking for someone in their own home or condo. I can do lots of meals with a Filipino influence such as, battered pork, chicken adobo style, pancit Canton (a Filipino Chow Mein). Maybe a fish soup, crispy shrimp lumpia, or some braised oxtails in wine with a touch of herbs.

DIABETIC COOKING

As this country becomes totally obese, the health of our loved ones who have diabetes is lessening their quality of life. I believe that most people understand what it takes to mitigate their diabetes problems, and it involves a diet that fits them. We’ve all heard diabetics say, “I can’t eat sugar… I can’t have my pizza, I can’t drink a soda.” While all of these are importantly very true, there are ingredients out on the market that are being utilized by professional chefs catering to the cooking of meals for diabetics. I have worked in the health food industry in the past, and no I am not a professional dietician, nor a nutritionist. However I have learned about healthy cooking by cooking for people looking for healthy foods. We needed to stock our hot bar with delicious foods one may eat at home, or comfort foods if you will. But by cutting back on high glycemic processed sugars, syrups and such, we used to make awesome meals by using organic agave nectar, and using Stevia. We would never use processed white sugar, but we would use brown raw sugar all the time in moderation. What I’ve learned is this, everyone who has diabetes either Types 1 or Types 2, will have different proportions made up for them during meal time, as you know each person is unique from height, weight, nationality, family makeup… you name it we are all different. For instance you may see an overweight man and automatically claim, “He’s a diabetic for sure.” But he’s not, but the skinny woman standing next to him is. You see what I mean?

One of my services is cooking healthy meals for you or your loved one friend or family, call me and I can help you prepare delicious food for breakfast, lunch and dinners. Or if only one person in  your party needs a healthy diabetic friendly meal I can customize it for you. Just remember, I will not cook for anyone unless I have an interview with that person, I will need a written instructions from his or her doctor, nutritionist, or dietician instructing types of foods that he or she can consume. Again I am not a licensed dietician or nutritionist but understand the ingredients that is needed to make an awesome meal that is diabetic friendly.

Serving portions are of importance and if you already have seen a professional in your meal preparations, you understand the portions that you can consume. I can only follow your professional health care providers instructions and prepare your meals, but I cannot stop you from eating more or less than you’re supposed to.

Fried Chicken, Pizza, Omelets, Steaks, Seafood, Fish, Beef Stews, Roasts, all of these types of home cooking can be customize for you using the safe ingredients for diabetics. I also use cook books for guides in cooking for diabetics, I’ll use certified books from the American Diabetes Association.
